š„ Express Mediterranean salad
Ingredients:
– Cooked chickpeas (or any other legume of your choice)
– Cherry tomatoes
– Black olives
– Feta or fresh cheese
– Cucumber
– Onion
– Avocado
– EVOO, salt and oregano
Preparation:
Drain the chickpeas well and place them in a bowl. Cut the remaining ingredients into small cubes, add them to the same bowl as the chickpeas and mix well. Add a drizzle of oil and a pinch of salt and oregano, to taste.
Ready to serve! Prepared in 5 minutes and perfect for sharing. And, in addition, super fresh.
š® Hummus and vegetables wraps
Ingredients:
– Wheat or corn pancakes
– Hummus
– Arugula or lettuce
– Grated carrot
– Avocado slices
Preparation:
Spread the hummus on the pancake, add the vegetables and roll up. Ideal for the whole family, fresh and easy to carry to any corner of the campsite.
š§ Cheese, fruit and nut toasts
Ingredients:
– Rustic bread or large crackers
– Goat cheese or cream cheese
– Figs, grapes or apple
– Walnuts
– Honey (optional)
Preparation:
Assemble the toasts with a cheese base. Then add fresh fruit (figs, grapes or apple) and nuts. If you like, you can also add a little honey on top, to give it a sweet touch. A gourmet dish without lighting a flame. Perfect for a light snack or dinner.
š Gazpacho without mixer
Ingredients:
– 4 large ripe tomatoes
– ½ cucumber
– ½ green bell pepper
– EVOO, vinegar, salt
Preparation:
Wash the tomatoes well, cut them in half and grate them. Pour the result into a large bowl. Peel the cucumber (optional, according to taste), and grate or cut into very small cubes. Add it to the bowl with the tomato. Cut the green bell pepper into thin strips and then into very small cubes. The smaller they are, the better they will be integrated into the mixture. Add it to the bowl. Season to taste and mix well. If you have a cooler, cover the bowl with a plate or plastic wrap and store for at least 15-20 minutes. Now, ready to enjoy a fresh dish!
š Sweet snack of banana, peanut and chia cream
Ingredients:
– Banana
– Peanut cream
– Chia seeds
– A touch of cinnamon or grated coconut (optional)
Preparation:
Cut the banana into slices. Then, spread the peanut butter over them and sprinkle chia and cinnamon (or coconut) on top. Sweet, energetic and healthy! Ideal for breakfast or snacks.
